I call it the “wild pigeon” because Segundo Alonso, chef and owner of “La Torcaz”, used to work (and he is actually one of the owners) at “La Paloma” restaurant (The Pigeon). He wanted to enhance that name and this is where La Torcaz’s name comes from.
La Torcaz is located in Calle de Lagasca, 81st, in the middle of one of the most expensive neighbourhoods in Madrid. It is one of the most prestigious and well known restaurants in the capital regarding seasonal market cuisine.

I asked Segundo his most special anecdote at the restaurant and this is the story:
It happens some years ago in between Mr. Camilo José Cela (a Spanish well known writer) and our chef, Segundo Alonso.
Mr. Camilo came with other 8 persons to La Torcaz and asked Segundo if they could have something very special to eat that wasn’t in the menu: veal head. Segundo said – of course I can do that -. He made it and Mr. Camilo loved it so much that when one of his guests asked for another dish, he just replied:
– To eat eggs or other dishes, wait until you go home. Here we are eating veal head.
I guess it was really good? 😉
